INGREDIENTS
900g Fresh medium seawater shrimps
12 pcs Salted duck’s egg yolks
1-2 tbsp XO Sauce
1/3 pack Butter
Salt (to taste)
Pepper (to taste)
Oil

Method

1. Steam salted duck’s egg yolks for 10 minutes. Crush with a fork whole it is still hot.

2. Wash shrimps and trim the rostrum and legs. Cut along the back and de-vein. Wipe dry. Mix with salt and marinate for 1/2 hour.

3. Heat oil. Add shrimps and deep fry over low heat until shrimps are 70%done, start to curl and turn red. Drain.

4. Wash the wok and wipe dry. Heat butter and add XO sauce, salted duck’s egg yolk and seasoning. Stir fry over medium heat until it bubbles. Return shrimps and stir fry until shrimps are coated with salted duck’s egg yolks. Sprinkle with salt and pepper and stir well. Serve.
